Tomato Focaccia

Sun and freshness go hand in hand with this simple and tasty recipe made of a very few ingredients. A dish full of tasty tomatoes to enjoy over and over again.

Focaccia Dough

- 2 cups of organic  La Milanaise Tipo "00" pizza flour

- 2 tbsp. of instant yeast

- 1 c. of sugar

- 1/4 c. of salt

- 1 cup of warm water

- Fine herbs to taste

- Sunflower oil



- 2 pink organic Ancestrales Savoura Bio tomatoes cut into thin slices

- 1 ​​mozzarella ball, sliced

- Garlic pesto

- Ground pepper and salt to taste



1- Mix all dough ingredients with the stand mixer’s kneading hook until it becomes smooth.

2- Place the dough ball in a lightly oiled bowl and cover with a damp cloth. Let stand in a warm place for 1 hour, until the dough has doubled in size.

3- Coat your hands and the aluminum plate (13 "x 9") with oil. Spread the dough and press with your thumb at regular intervals to make small cracks. Allow to rise for another 30 minutes.

4- Season with salt and pepper and garnish with fresh herbs to taste. Finish with a drizzle of oil.

5- Bake at 400 ° F for 20 to 25 minutes.

6- Remove the dough from the oven when ready. Let cool for 10 minutes.

7- Place slices of tomato focaccia, alternating with slices of mozzarella. Spread garlic pesto on top. Season with salt and fresh ground pepper to taste.
