Toque et Tablier is a young company focused on culinary creativity. This father-daughter collaboration is based on the desire to develop and produce premium fruit cakes. The range of products made by Toque et Tablier is for people who want to discover gastronomic novelties.

A duet


The company started with the commercialization of the Le Distingué fruit cake, a recipe  polished by the family for several years. Toque et Tablier has modernized this traditional cake often frowned upon by Quebecers . Following the popularity of Le Distingué, the co-owners worked to develop an ambitious collection of cakes, marrying flavors and unusual ingredients.

Pierre Trudel, co-owner, is in charge of production. With two employees in the kitchen, he prepares more than 30,000 fruit cakes per year. As a retired food inspector, he supervises each operation to ensure the uniformity and superior quality of Toque et Tablier’s fruit cakes.

Marilyne R-Trudel, his daughter, deals with all other operations, marketing, etc. She makes sure that each delivery goes well by doing it by herself. It’s also a good opportunity for her to keep a personal contact with each retailer.

3 unique recipes
 

All the products of Toque et Tablier are entirely made and packaged by hand according to the purest tradition. Moreover, they are refined in alcohol for 30 days before they become available  to ensure their full flavor. For the true amateurs, a limited edition of the fruit cake Le Distingué, ripened in rum for 1 year, is available annually. 

Toque et Tablier also offer a tasting case that contains a miniature format (100 g.) of three flavors: Classic rum, Maple and whiskey, as well as Chocolate and black beer. The creation of deliciousness in 7 steps
 

It’s important to know all the ingredient in what you eat, but it’s also a good thing to understand how it is made. Toque et Tablier reveals for you the secret of their authentic recipes:

  1. Rigorous selection of ingredients (manual sorting of all elements)
     
  2. Assembly of recipes for maceration. All the dry ingredients are put together for the assembly of the recipe. The are then  added the alcohol to allow the fruit and nuts to macerate for several days before cakes are cooked.
     
  3. When the maceration is complete, the liquid ingredients are added and the cakes are molded and weighed individually.
     
  4. The cakes are slowly baked at low temperature.
     
  5. Once cooked, the cakes are demolded by hand. Then, they are let to rest 12 hours in order to temper.
     
  6. Cakes are then brushed with alcohol (rum, whiskey or black beer) and stored in a cold room at a specific temperature for maceration. They will remain there at least 30 days before being sold. Toque et Tablier even have a limited edition that they refine for 1 year with rum. These are cakes that they pamper with rum every month for 1 year!
     
  7. The cakes, ready for sale, are packed one by one. They are first covered with plastic wrap and then placed in a nice box and decorated with a ribbon.
