Beef shoulder ribs (10x1) - Prepared from the front 5 ribs, the shoulder is removed from the front with the knife in order to free the ribs from the chuck, these are cut with a saw, parallel to the chuck and the joint of the tip of breast for a final cut of 4 ribs 6 to 8 inches long.
