Hummu-so

his mellow "Hummu-so" (Chick pea miso) gives a new twist to Western recipes by introducing pure "umami" flavor. San-Ô's craft mellow miso is Sai-kyo (西京味噌) style, made with hands in every process. Made of chick peas and koji rice. A very clear, low salt (about 4.6% salt) and sweet taste rice miso due to the high proportion of koji rice.
