Loin(0 bone 0x0 6 MF) - Prepared from the short saddle 0 bones (without fat and kidney), the short loin is separated from the buttock with a knife cut under the ilium and disjointed at the 6th lumbar vertebra, the flank is separated from the loin by a perpendicularly cut along the ribs, shaped at 0" of the tenders, regular trimming.
