Meule du Barrage Fumé is made with pasteurized milk and no modified milk ingredients. Loved for its delicate, smoky flavor, this wheel-shaped cheese has a firm paste, lightly matured and exposed to cold smoke for a defined period. In addition to preserving the paste, smoking flavors the cheese and gives its rind an ochre-brown color.
