Part of the leg located behind the coaxial (group bones), bonded on the outside of round and below the sirloin tip, the sirloin top butt (peeled) is detached with a knife following the naturals tissues, shaped and trimmed in manner that the ligament, cartilage, fat and silver skin are denuded at 100%.
