Velours II.
Inspired by Belgian tradition, this saison is the result of fermentation in a square, flat-bottom tank. It was followed by a brief maceration of sumac harvested right here on the farm, along with plum pomace. Slightly funky and decidedly rustic, Velours II offers a surprising complexity on the nose for a ‘young’ saison. On the palate, notes of hay, leather, and stone fruit give way to a finish that is as dry as it is refreshing.
